This banana pound cake is a great alternative to wheat-based cakes for the holidays. It is ultra-healthy, delicious, and easy to make.
½ cup coconut oil
Stevia – 22 small teaspoons (use the very small one that comes with the Stevia container, NOW Foods Better Stevia is recommended)
¾ teaspoon sea salt
1 teaspoon baking soda
6 eggs (room temperature is best)
¾ cup coconut flour
3 ripe bananas cut into pieces
Preheat the oven to 350 degrees.
In a large bowl, mix everything
Pour the batter into a loaf pan or glass pan with baking paper
Bake for 60 minutes or until a toothpick comes out clean.
Let cool completely before removing from the pan and serving. Keep refrigerated.
